This Beer is our take to a brut Beer. Recipe based on our InnerFox Tripel, but with a higher alcohol content and refermented with Champagne Yeast.
A small amount of Calvados from the house of Christian Drouin was added after fermentation to give a subtle but fresh apple vibe to the beer.

After refermentation we brought the bottles to the fine people at Dame Jeanne Brut Beers to have it disgorged.
